ingredients: 2 cups flour
1/2 tsp soda
1 tsp cinnamon
2 tsp baking powder
1 cup pumpkin (8 oz)
1 tsp salt
1/2 cup milk
1/2 tsp nutmeg
1/4 cup softened butter
1 cup sugar
2 eggs
1 cup nuts (optional)
prep: Preheat oven to 350°. Grease 9x5x3 inch loaf pan.
Sift together the flour, soda, powder, salt, cinnamon, nutmeg. Combine
pumpkin, sugar, milk and eggs in mixing bowl. Add the dry ingredients
and butter, mix until well blended. Stir in the nuts. Bake 45 -55
minutes or until toothpick inserted comes out clean.
Notes: To make 2 loaves use 1 can (16 oz) pumpkin and double remaining
ingredients.
May freeze.
